Born in the region of Bordeaux, good food and the “savoir vivre” have been embedded in my life since childhood. The passion for cooking convinced me to start my career as an apprentice in a local butchery, before starting to work as a Chef for a catering company in the south west of France.
While searching for a new challenge in an exotic country, I found myself in Luang Prabang for the first time in 2013, and I started my journey with Belmond at la Résidence Phou Vao as Sous Chef.
After a short while, the journey with Belmond continued and brought me back to Europe, to join the team at “Le Manoir by Raymond Blanc” a two Michelin star cuisine in the United Kingdom.
However, having met my wife in Luang Prabang whose family is from Lao, we always considered to come back to Laos one day, once the opportunity would arise. Now I am back since 3 months as the Head Chef of Amantaka and happy to share my passion of cooking with our guests, and show them what Lao’s culinary side has to offer.
